Shanghai Cuisine features thick and mellow juice, heavy oil, bright colors and original tastes. Shanghai is a paradise for gourmets all over the world, where you can try the typical fine food in China.

Famous dishes are as follows:

Eight-treasure Chicken, etc.

Shanghai food is influenced by the areas around Nanjing, Hangzhou, Suzhou and Shanghai itself.
These dishes require longer time to cook and tend to be richer than the Cantonese variety. Similar ingredients to those in Northern/Beijing food are used in preparing Shanghai food except that extensive amounts of red chilies, sesame oil and vinegar are used.
"Braised Pork" is one of the specialties; the meat is cooked in red sauce for a long time for the meat to absorb the flavor of spices and is tenderer when it's ready.
Noodles or dumplings are usually served snacks or sometimes as lunches. Shanghai people usually eat rice with a variety of dishes as dinner. Generally speaking, the locals have a light taste and prefer sweet and fresh food.
Examples of Dishes
Crab from Hangzhou Suzhou region is one of the gourmet dishes during the autumn. Drunken Chicken, Shanghai Noodles and Dumplings are some other famous dishes.
